TEMPERATURE
When it comes to wine tasting, there is a tendency to drink white wine too cold and red wine too warm. While personal preference is really what matters most, temperature plays a big role in what flavors the mouth can detect and can be an important determinant in wine tasting versus wine drinking.
In wine tasting, the idea is to taste the wine as deeply and completely as possible in order to discern any and all aromas, flavors, and subtle differences as well as any perceptible flaws in the wine. As the temperature of the wine decreases, so too does the mouth’s ability to distinguish flavor, weight, and acidity in wine. Cooler temperatures also keep the lid on aromas and make a wine smell less intense, more restrained and somewhat neutral.
