Whether the wine is there to showcase the food or vice versa, the first thing to pass most peoples lips at any social gathering is the wine. As it is poured, we get a chance to see the color and clarity as it slowly takes over the glass. A quick sniff can tell you broadly what to expect. A longer slower inhalation tends to reveal much of the wine’s character. Is it a flinty old world white or a more fruit forward new world chardonnay? Is there a glow in the glass Burgundy or is all light lost in a deep black hole of a big Australian Shiraz. These little subtleties or big indicators can have a big impact on what you expect that first sip to be. |
